Description

For the vintner at heart, the Cabernet Sauvignon vine is the crown jewel of the home vineyard. This world-renowned variety produces small, thick-skinned berries bursting with the intense color, tannin structure, and complex flavors of blackcurrant, cedar, and spice that define classic, age-worthy red wine. A sun-loving challenge with an unparalleled reward for the dedicated Bay Area gardener.

  • Produces small, tight clusters of deep blue-black berries with very thick skins and a heavy protective bloom.

  • Berries are high in sugar, acidity, and, most importantly, tannins and anthocyanins (color), providing the essential backbone for powerful red wine.

  • Flavor profile is complex and concentrated, featuring notes of dark berry, green bell pepper, tobacco, and vanilla (from oak aging).

  • A self-pollinating, vigorous, but later-ripening deciduous vine that demands a long, warm growing season with ample sun—ideal for hot Bay Area inland valleys.

  • Requires precise viticulture (pruning, crop thinning) and patience, as the grapes often ripen very late in the season (October-November).

  • The primary goal is winemaking, producing wines that are full-bodied, tannic, and capable of long-term aging.

Flavor Profile (of the grape/young wine):

  • Flavor: Intense dark fruit (black cherry, blackcurrant), herbal notes, and strong tannic grip.

  • Texture: Thick-skinned with highly astringent tannins; not intended for pleasant fresh eating.

  • Best Uses: Exclusively for crafting high-quality, dry red wine. Requires knowledge of winemaking processes.
